BONUS: A Comforting Soup Recipe to Soothe Your Winter Weary Spirit!

Curried Butternut Squash Soup
Ingredients: (Alternative ingredients listed below the recipe)
- 1 Tbsp. unsalted butter
- 1 small onion, chopped
- 4 cups butternut squash, peeled and cut into chunks
- 1 small apple, peeled, cored and chopped
- 4 cups chicken broth
- 1 ½ tsp. curry powder
- ¼ tsp. salt
- 1/8 tsp. pepper
- ¼ cup cream
Directions:
- Heat butter over medium heat in a large pot.
- Add onion, cook until soft, about 3 minutes.
- Stir in squash and apple.
- Add chicken broth, curry powder, salt and pepper. Bring to a boil.
- Reduce heat, cover and simmer for 25 minutes or until squash is soft and tender. Stir occasionally.
- Let cool 5 minutes. Puree in blender or use an immersion blender in the pot.
- Stir in cream; heat through.
- ENJOY!
TIP: To save time and energy, purchase precut butternut squash from your grocery store.
