Everything But the Kitchen Sink Soup

* 1 Tbsp olive oil

* 1 yellow onion, chopped (OR leeks if you don’t tolerate onions)

* 3 cloves garlic, minced

* 1 Lb. ground turkey (OR beef OR 2 cans of beans)

* 4 cups bone broth or broth of your choice

* 3 carrots, sliced

* 2 celery stalks, sliced

* 2 small zucchini, sliced

* 8 large mushrooms, sliced

* 1/2 cup chopped flat-leaf parsley

* 1 can pumpkin (they won’t even taste it…trust me)

* 1 Tbsp oregano

* 1/2 Tbsp basil

* 1/2 tsp salt


1. Warm olive oil in a soup pot, then add onions. Saute until onions start to soften.

2. Add garlic and stir/saute for one minute

3. Add meat and break into small chunks

4. Add spices and mix well with the meat, onions, and garlic.

5. Dump the rest of the ingredients into the pot.

6. Bring to a boil, then simmer for about 20 – 30 minutes until veggies are soft but not mushy.
