Ingredients for Salad:
- 2 cups cooked quinoa
- ¾ cup pineapple, cut into small pieces
- 1 cup strawberries, quartered
- ½ cup blueberries
- 2 Tbsp. pine nuts
Ingredients for Dressing:
- ¼ cup olive oil
- ¼ cup apple cider vinegar
- Zest of 1 lemon
- 3 Tbsp. freshly squeezed lemon juice
- 3 drops of stevia
- Make the vinaigrette by whisking together the dressing ingredients in a small bowl; set aside.
- In a large bowl, combine the salad ingredients. Stir in the lemon vinaigrette.
