Quinoa Fruit Salad with Lemon Vinaigrette

Ingredients for Salad:

  • 2 cups cooked quinoa
  • ¾ cup pineapple, cut into small pieces
  • 1 cup strawberries, quartered
  • ½ cup blueberries
  • 2 Tbsp. pine nuts

Ingredients for Dressing:

  • ¼ cup olive oil
  • ¼ cup apple cider vinegar
  • Zest of 1 lemon
  • 3 Tbsp. freshly squeezed lemon juice
  • 3 drops of stevia


  1. Make the vinaigrette by whisking together the dressing ingredients in a small bowl; set aside.
  2. In a large bowl, combine the salad ingredients. Stir in the lemon vinaigrette.
