Simple Beet Salad

· 4 large beets

· Approx. ¼ cup fresh parsley, chopped

· 2 cloves garlic, minced

· ¼ cup olive oil (or more if needed

· Salt and pepper to taste


1. Wash beets and place on tin foil

2. Spray with avocado cooking spray

3. Wrap beets with the seal on top (so the juice doesn’t spill out)

4. Place on a cookie sheet and roast at 400 degrees for about an hour (may need more – you want a fork to poke through the beets easily)

5. Let beets cool

6. Using kitchen gloves (so you don’t stain your hands), peel the skin off of the beets

7. Cut beets into bite-sized chunks

8. Place in a bowl with chopped parsley and minced garlic

9. Drizzle olive oil, add salt and pepper

10. Taste and add more of what you need
