Ingredients:
· 1.5 – 2 lbs. fingerling potatoes
· 3 Tbsp. melted butter, ghee, or olive oil
· 4 cloves garlic, crushed
· Approx. 1 Tbsp. seasoning of choice (Greek, Italian) OR 1 Tbsp. fresh parsley, chopped
· 3 Tbsp. parmesan cheese, grated (or more if needed)
· Salt & pepper to taste
Directions:
1. Boil potatoes for 20 – 25 min. in a covered pot until fork-tender.
2. While potatoes boil, turn the oven to 400°
3. Drain potatoes.
4. Place them on a lightly greased baking sheet.
5. Using a fork or potato masher, lightly smash them so they stay intact.
6. Mix together the garlic and fat.
7. Spoon over each potato.
8. Sprinkle with seasoning, salt, and pepper.
9. Roast for 10 – 15 minutes until potatoes are golden brown.
10. Top with cheese and roast for 5 more minutes.
