Salad Ingredients:
· ½ large English cucumber, diced
· 1/3 purple cabbage, chopped
· 1/3 green cabbage, chopped
· 1/3 cup cilantro, chopped
· 1 large pepper (color of your choice), diced
· 1 large carrot, chopped
· 3 green onions, sliced
· ½ cup sunflower seeds
Dressing Ingredients:
· 3 Tbsp. soy sauce (or tamari or coconut aminos)
· ½ cup peanut butter (or almond butter or sun nut butter)
· 2 Tbsp. rice wine vinegar
· 1 Tbsp. lime juice
· 1 Tbsp. sesame oil
· 1 Tbsp. honey
· 1 ½ tsp. garlic powder
· ½ tsp. ground ginger
· 1 tsp. red pepper flakes
Directions:
1. Chop or dice all veggies.
2. Whisk dressing ingredients in a bowl until smooth.
3. Pour dressing over veggies and mix well.
This tastes amazing the next day, too!
